In the next couple of days, pumpkins will be carved all over the country. It’s such a fun family activity that is really good for any age. Teens love getting creative and toddlers love scooping out the slimy center – and with all this carving and scooping come tons of pumpkin seeds. Don’t let them go to waste. Toast them up and enjoy a healthy snack with the kids after all your hard work or use them to add texture to salads, taste to breads, or dress up soup as a topping.
How to toast pumpkin seeds…
Ingredients
- 2 cups pumpkin seeds
- Butter-flavored cooking spray
- 1/2 tsp. course salt
Directions
- Rinse seeds thoroughly and discard any stringy membranes. Spread seeds into a single layer on a baking sheet. Let seeds sit for about 2 hours or until dried.
- Heat oven to 350°F. Spray seeds generously with cooking spray; sprinkle with course salt.
- Bake for approximately 8 minutes or until lightly browned, stir seed after 4 minutes.
