Sprinkles is offering two limited edition, St. Patrick’s Day-themed cupcakes this year.
The green velvet cupcake is a dyed green version of Sprinkles’ Southern-style chocolate cake topped with cream cheese frosting. The Bailey’s Irish chocolate cupcake features Belgian dark chocolate cake topped with cream cheese frosting dosed with Bailey’s and topped with a fondant shamrock. $3.25 each; available Friday to St. Patrick’s Day. Since most of us don’t live near a Sprinkles, we need to mix up our own batch. Take the cue from the pros and instead of green icing, go for the green cake. It’s festive and very unexpected! Duncan Hines has a wonderful Red Velvet Cake mix, I have used this several times for cupcakes – just add green food color. Top with cream cheese frosting and add some Bailey’s Irish Cream if you like.
Bailey’s Cream Cheese Frosting
(recipe for one cake 8×8, equivalent of 12 cupcakes )
- 4 ounces cream cheese (room temperature)
- 1 cup confectioners sugar
- 3 tablespoons of Bailey’s Irish cream
