Radishes are in season and can make a colorful addition to your party table in numerous ways. They’re a perfect addition to salads for their color, flavor and texture. The bonus is they have a high nutritional content, yet are low in calories. Radishes are also wonderful in crudite and appetizers. There are a wide variety of radishes, but broadly speaking, they can be categorized into four main types according to the seasons when they are grown. Spring, radishes can also be referred to as European radishes – they are planted in cooler weather and a usually bigger and more colorful than the summer variety
Cucumber and Radish Salad
- 1 English cucumber
- 1-bunch radishes, cleaned
- Olive Oil & Red Wine Vinegar Salad Dressing
- Salt and Pepper to taste
- Optional Fennel and Scallions
Slice cucumber and radishes very thin. Use a mandolin slicer if you have one, it’s perfect for the job. If you like fennel and/or scallions, these make great additions to the salad. Chop the scallions small and shave the fennel to keep it thin. Before serving toss the vegetables with olive oil, red wine vinegar, course salt and cracked pepper to suit your taste.
