A radishing way to entertain this spring!
Radishes are in season and can make a colorful addition to your party table in numerous ways. They’re a perfect addition to salads for color and flavor. The bonus is they have a high nutritional content, yet are low in calories. Radishes are also wonderful in crudite and appetizers.
Cucumber and Radish Salad
- 1 English cucumber
- 1-bunch radishes, cleaned
- Olive Oil & Red Wine Vinegar Salad Dressing
- Salt and Pepper to taste
- Optional Fennel and Scallions
Slice cucumber and radishes very thin. Use a mandolin slicer if you have one, it’s perfect for the job. If you like fennel and/or scallions, these make great additions to the salad. Chop the scallions small and shave the fennel to keep it thin. Before serving toss the vegetables with olive oil, red wine vinegar, course salt and cracked pepper to suit your taste.
For a real twist, use them to embelish a place setting, as pictured above or in a centerpiece for a pop of color.
