The Bellini is a beautiful cocktail and is perfect for celebratory parties. Although it is made with Prosecco instead of Champagne, it is widely regarded as the best Champagne cocktail in the world. It has many variations and I have never met one I did not like, however my favorite is the White Peach Bellini. It’s the original and was first served by Giuseppe Cipriani, in Venice, Italy at Harry’s Bar in the 1948.
BONUS: The spirited cocktail feels like you’re drinking extravagant champagne while its base is Prosecco, Italy’s sparkling wine sold at a much lower price point than Champagne – same effect less money, love that!
TIP: When making a Bellini, everything (the glasses, Prosecco and white peach puree) should be as cold as possible. Use fresh frozen white peach puree when you can – our pick is from Perfect Puree.com (you can order online.)
