Mango Daiquiri Ice Pops – Friday’s Featured Cocktail!

If you live in the NYC area, you have been melting for almost a month now.  It has been one heatwave after another and everyone is just plain tired of being hot.   After watching my 3 boys go from hot to happy after slurping on ice pops yesterday, I set out to find a version for us big kids and I found it!

So in place of my usually Friday’s Featured cocktail, I am posting the recipe below from Gourmet.com for a delicious cocktail that’s not just cool, it’s ICY.  I hope you enjoy no matter where you live, cheers!  To check out more cocktail ice pop recipes from Gourmet.com visit>

Mango Daiquiri Ice Pop Recipe

Makes 8 (1/3-cup) ice pops : Active time:15 min  – Start to finish:1 day
  • 3 cups chopped peeled mangoes (2)
  • 6 tablespoons light rum
  • 1/2 cup superfine granulated sugar
  • 2 tablespoons water
  • 1 1/2 tablespoons fresh lime juice

Special equipment:

  • 8 (1/3-cup) ice pop molds and 8 wooden sticks

Directions:

  • Blend all ingredients in a blender until smooth, then force through a fine sieve into a large glass measuring cup. Pour into molds and add sticks. Freeze at least 24 hours.
