Watermelon Ice Recipe

Watermelon Ice is a great way to cool off the kids or party guests.  Plus, this budget-friendly recipe will help you feed a crowd for lots less than store bought ice pops or ice cream. It’s a favorite in our homes – we hope you enjoy!


Watermelon Ice Recipe

  • ⅓ cup water
  • ½ cup sugar
  • a 3-pound piece chilled watermelon
  • 1 tablespoon fresh lemon juice
  1. In a sauce pan on low heat, simmer water and sugar, stirring until all the sugar is dissolved.
  2. Transfer mixture to a bowl set in a larger bowl of ice and cold water
  3. Stir continuously until syrup is cold.
  4. Cut watermelon into 1-inch chunks.
  5. Purée watermelon in blender slowly adding the syrup, and lemon juice.
  6. Pour all the liquid from the blender through a fine sieve into a 9-inch square metal baking pan
  7. Cover the pan with plastic wrap and freeze.
  8. Scrape watermelon ice with a fork to lighten texture and put small juice glasses or tumbles.
  9. Garnish with a small wedge of watermelon.
