Cool 4th of July Dessert Idea: Red, White & Blueberry ”Shortcakes”

Here is a delicious dessert idea for your Fourth of July celebration.  I recommend buying or making soft sugar cookies so that you can cut them according to the Breyer’s recipe below.  Berries are in season and this dessert makes the most of them and an American Favorite, Ice Cream!  For more great recipes check out the Breyer’s Site>

Red, White and Blueberry “Sorty Cakes” from Breyer’s

Ingredients:

  • 1 cup quartered strawberries
  • 1 Tbsp. sugar
  • 2 cups fresh blueberries and/or raspberries
  • 6 large (3-inch) soft sugar or shortcake cookies, divided
  • 8 small scoops Breyers® All Natural Vanilla Ice Cream (about 2 cups)

Directions:

  • In blender or food processor, process strawberries with sugar until smooth. In medium bowl, toss blueberries with strawberry mixture. Let stand 30 minutes.
  • To serve, cut 2 cookies in half; reserve. On 4 dessert plates, arrange 1 whole cookie, then evenly top with Breyers® All Natural Vanilla Ice Cream. Garnish with reserved cookies and drizzle with strawberry topping.

  2. This is a good treat not only for the celebration of July 4th but for any occassion. It will make a good addition to picnic. Everybody loves Breyers ice cream and to add fruit along with cookies will make a tasty treat for the children.
