Need an afternoon treat for visiting family and friends or a quick and easy dessert for dinner guests. Here is a twist on an old standby that most of us have made for the kids. This version is just as simple, but a bit more sophisticated for the grown-ups. All you need is your favorite brand of vanilla or coffee ice cream, a box of Nilla Wafers and pignoli nuts (pine nuts). Make these ahead of time and when you are ready pull them out and serve with espresso or coffee (hot or iced).
Directions:
Let ice cream soften at room temperature for 15 to 20 minutes, then place a small scoop on the flat side of a Nilla Wafer. Top with another Nilla Wafer, and press gently. Roll the sides of the sandwich over a plate sprinkled with pignoli nuts to coat the ice cream. Freeze on a baking sheet for 1 hour to harden; wrap each in plastic. They will keep, frozen, for about a week. While you are at it, make some up for kids by rolling in colored sprinkles.
