S’mores is the classic American desert that brings us all back to summer. As school approaches, what better way to bring a little summer into your kitchen by making s’mores inspired cookies! Both recipes use the same ingredients, so you can use the same dough for both types of cookies. Even if you don’t have a grill it doesn’t mean you can’t have a s’more! These simple and quick recipes are perfect to make in all types of kitchens, even at college! I will absolutely be whipping up these cookies for my roommates in the dark of winter to give them a little taste of a summer campfire!

What better occasion to make a twist on both s’mores and cookie chocolate chip cookie than National S’mores Day on August 10th. Honey Maid sent me this fabulous package to help me celebrate. Honey Maid Graham Crackers have been part of the classic treat for nearly 90 years.  So whether you will be celebrating away at college or in the comfort of your own home, break open a box of Honey Maid Graham Crackers and test out these delicious recipes – I think you’ll love them!

 RECIPES

Give Me S’Mores Chocolate Chip Cookies (image above)

Ingredients

  • 2 sticks unsalted butter, softened
  • ¾ cup granulated sugar
  • ¾ cup packed brown sugar
  • 1 tsp. vanilla extract
  • 2 large eggs
  • 2 ¼ cups all-purpose flour
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 1 ½ cup chocolate chips
  • 14.4 oz. box of Honey Maid Graham Crackers
  • 4 chocolate bars
  • 1 bag of Jet-Puffed StackerMallows (you can substitute another type of marshmallow)

Instructions

  1. Preheat oven to 375 degrees.
  2. In a mixer, thoroughly combine butter, vanilla extract, granulated sugar and brown sugar on medium. Add in eggs one at a time on low speed and mix until fully incorporated.
  3. In a separate bowl, mix flour, salt, and baking soda. Slowly add this mixture into the mixer on low speed and mix until combined.
  4. Break 6 Honey Maid Graham Crackers into small pieces and drop into dough along with chocolate chips and mix on low until fully combined.
  5. Use an ice cream scoop to dollop the cookie dough on a cookie sheet. Make sure to spread the dough far enough apart because the dough will spread.
  6. On each dollop of cookie dough, place a graham cracker topped with a marshmallow and piece of chocolate to make a s’more. Push down on each graham cracker so the dough starts to form around the graham cracker. Place one more dollop of cookie dough on the top of the chocolate and spread the cookie dough around the s’more until it is fully covered.
  7. Bake in oven for 8-9 minutes or until golden brown.
  8. Cut in half as pictured above and share with friends and family or eat one whole!

 

Black and White Graham Cracker S’mores Cookies (image at top of post)

  • 1 tsp. baking soda
  • 1 tsp. salt
  • 1 ½ cup chocolate chips
  • Box of Honey Maid Graham Crackers
  • 4 chocolate bars
  • 1 bag of Jet-Puffed StackerMallows ( or substitute for another type of marshmallow)

 Directions

  1. Preheat oven to 375 degrees.
  2. In a mixer, thoroughly combine butter, vanilla extract, granulated sugar and brown sugar on medium. Add in eggs one at a time on low speed and mix until fully incorporated.
  3. In a separate bowl, mix flour, salt, and baking soda. Slowly add this mixture into the mixer on low speed and mix until combined.
  4. Break 6 Honey Maid Graham Crackers into small pieces and drop into dough along with chocolate chips and mix on low until fully combined.
  5. Dollop dough onto cookie sheet and bake for 5 minutes.
  6. After 5 minutes, take out cookie sheet and place half a marshmallow on one side of the cookie and a piece of chocolate on the other. Place back in oven for another 3-4 minutes or until golden brown.
  7. Once cookies are cooled, you can place cookies on a bed of grounded up graham crackers for a summer campfire feel!
