Here’s a Saint Patrick’s Day treat that’s Boozy Baking at its BEST!
The cake in this special dessert incorporates the Irish classic Guinness, and the icing another, with a shot of Baileys Irish Cream. St. Patrick’s Day is one of the biggest drinking days of the year. St. Patty’s Guinness Chocolate Cupcakes with Bailey’s Frosting
- 1 cup Guinness beer
- 2 sticks unsalted butter
- 3/4 cup cocoa powder (unsweetened)
- 2 cups all purpose flour
- 2 cups sugar
- 1 1/2 tsp baking soda
- 3/4 teaspoon salt
- 1/3 cup sour cream
- 2 eggs
- 4 cups confections sugar
- 1 stick unsalted butter, softened
- 4 tablespoons Baileys
- Preheat oven to 350°F. Line 24 cupcake cups with St. Patrick’s themed liners. Bring Guinness beer and 1 cup of butter to simmer in a saucepan over medium heat. Add cocoa powder and whisk until mixture is smooth. Whisk the flour, sugar, baking soda and salt. Beat eggs and sour cream in another large bowl to blend. Add chocolate mix to egg mix and beat just to combine. Add flour mix and beat quickly on slow speed. Fold batter in until completely combined. Fill cupcake liners 2/3 to 3/4 of the way. Bake cake about 17 – 20 minutes. Cool cupcakes on a rack completely.
- Whip the butter with an electric mixer until very light and fluffy. Slowly add the powdered sugar, a few tablespoons at a time. When the frosting looks thick enough to spread, drizzle in the Baileys and whip it until combined.
