For a party in minutes try Italian Wedding Soup!

Wedding Soup is a delicious and special way to feed a crowd and I LOVE the range of this meal.  It works for everything from a formal holiday dinner 1st course to a casual weekday supper or lunch.  Traditional recipes can take hours to make, so that’s why we’re excited to share this recipe from Sue Sullivan of Hot Squeeze.  We have been fans of her Sweet Heat Chipotle sauce for years, and can’t wait to try out our own recipes with her new line of seasoning mixes.

Easy Italian Wedding Soup

Bursting with carrots, spinach, meatballs and the Easy Chickpeasy blend and  Italian Riviera Seasoning makes it easy and flavorful.


  • 1 tbs olive oil
  • 1 medium onion, chopped
  • 1 garlic clove, minced
  • 2 c. chopped carrots
  • 1 c. petite diced tomatoes
  • 3 c. chopped fresh spinach
  • 1 12-oz bag frozen meatballs
  • 2 tsp Italian Riviera, or Italian seasoning
  • 1 c. Easy Chickpeasy
  • 6 c. chicken broth
In stock pot, heat oil then add onion, garlic and carrots.  Cook over medium high heat stirring for 5 minutes to soften.  Add Italian Riviera Seasoning Blend, meatballs, tomatoes and chicken broth.  Cook over med. high heat until it comes to a boil, (about 10 min).  Add Easy Chickpeasy and spinach,  reduce temperature to med. and cover pot.  Cook an additional 10 minutes.  Season with grated parmesan and serve with crunchy Italian bread.
