Kale, Quinoa and Avocado Salad

After the holidays, we’re all about eating right and this Kale, Quinoa and Avocado salad is a great fresh start!

 This flavorful and healthy salad will leave you feeling satisfied and nourished. It features ingredients that pack a flavor punch into bite-size servings; no two mouthfuls will taste the same. We’ve included avocados to temper the heat of the jalapeños and add a creamy texture to contrast the course kale.  Plus sweet corn and grape tomatoes to add some garden goodness (an ode to the Garden State of NJ),  bacon (which makes everything taste like a treat), quinoa, and a big sprinkle of Feta cheese.  Serve your salad undressed on a large platter with olive oil and fresh lemons on the side so you’re guests can dress it to their liking and at their leisure.

Kale, Quinoa and Avocado Salad

Ingredients

  • 16 oz. kale (washed and chopped)
  • 1 cup cooked quinoa
  • 2 Avocados from Peru (peeled, pitted and cubed)
  • ¼ cup crumbled bacon
  • 1 jalapeno, seeded and sliced
  • ½ cup crumbled Feta cheese
  • ½ cup sweet corn kernels
  • Grape tomatoes, sliced lengthwise
  • Fresh cracked salt and pepper to taste
  • ¼ cup extra virgin olive oil
  • Fresh lemon juice, to taste

Instructions

  1. Gently toss together first 9 ingredients (kale – salt & pepper.)
  2. Arrange tossed salad on large platter or bowl. Serve lemon and olive oil on the side to allow guests to dress to taste.
